Welcome to Tuesday’s Dish. Today we are going to share one of our yummy slow cooker meals that we like to call Mexican Chicken. It is an easy, throw-together that the whole family loves.
- 2 lbs Chicken
- 2-16-oz cans of black beans
- 2-16 oz cans of diced tomatoes (you can use the spiced kind too)
- Adobo seasoning (to taste) – optional
- Water
Place chicken in crockpot (can even be frozen chicken breasts). Add 2 cans of black beans, 2 cans of diced tomatoes, and Adobo seasoning to taste (if using) and water to cover. Cook for 6-8 hours. Serve over brown rice with a vegetable side, if desired. Yum!

The crock pot chicken sounds great. I just bought some whole chickens on sale and I am going to try it
. Here is a great salad to try with that. Slice some cucumbers, drizzle with fresh lime juice, sprinkle with salt and chilli powder. Yum!
I just posted a recipe for dump cake–sounds nasty, but it is easy, delicious and versatile.

I love finding a good sale on whole chickens. Making them in the crockpot makes removing the bones so easy; it just falls off!
