Well, I’m a day late with our Tuesday’s Dish but I still wanted to share.
Today we are going to share one of our yummy slow cooker meals that we like to call Mexican Chicken. It is an easy, throw-together that the whole family loves.
- 2 lbs Chicken
- 2-16-oz cans of black beans
- 2-16 oz cans of diced tomatoes (you can use the spiced kind too)
- Adobo seasoning (to taste) – optional
- Water
Place chicken in crockpot (can even be frozen chicken breasts). Add 2 cans of black beans, 2 cans of diced tomatoes, and Adobo seasoning to taste (if using) and water to cover. Cook for 6-8 hours. Serve over brown rice with a vegetable side, if desired. Yum!

Put the stock, garlic, cumin, tomatos, bay leaves and salt and pepper in your slow cooker. Lightly colour your chicken with onion in fry pan until just sealed and pop in slow cooker, OR just pull apart your roast chicken and put in with onion. I put this in for 1 hour on high and then add corn and put on low for 2-4 hours depending on chicken meat.
