If you have trouble getting your kids to eat veggies, you might wanna take a look at this Tuesday’s dish. This week I’m sharing a fun way to serve a snack to your kids. Thanks to Barb at Barbs Writings and Recipes, she has a wonderful suggestion on serving some kid friendly veggie snacks.

Ingredients:
Peppers (whatever color you prefer)
Hummus
Cucumbers (sliced)
Whole Wheat Crackers
Assembly:
First, take a pepper of your choice and cut in half, remove the seeds, and rinse. (My daughter prefers yellow or orange peppers so that’s what we used). Next take the other half of the pepper and make thin slices.
Fill the front half of your pepper (your boat) with hummus and the back half of your pepper with cucumber slices.
Place pepper slices in the boat at oars or paddles.
Place whole wheat crackers at the back as a dock.
Voila! Pepper boats! My daughter thought this was a great snack. (My son scowled and asked for raisin bread — can’t win them all over!) Enjoy!
